Chicken and black bean Enchiladas

I was given this awesome recipe by my BFF Stacia, it was really really awesome so I of course had to share it with you! I hope you enjoy! :) We served this with Saffron rice, Sour cream and Guacamole with chips!

Ingredients:

Cheese
Flour Tortillas
1 can Corn (drained)
1 can Diced green chilies
1 can Black beans (rinsed)
Shredded Chicken (I used 4 breasts)
1 large can of Red Old El Paso Enchilada sauce

Directions:
Cook the Chicken(I boiled mine), shred and put in a big bowl. Then add black beans, corn and chilies to the bowl, salt and pepper to taste and coat everything with the red enchilada sauce.

Warm the tortillas so that it is easier to fill them without ripping them. Coat the bottom of the baking pan with a little enchilada sauce. Fill the tortillas with the mixture and place in baking pan.

Pour remaining enchilada sauce over the top and sprinkle with cheese of your choice. Then place in the oven at 350' covered with a greased piece of aluminum foil to keep it from sticking to the cheese for 30-40mins.

18 of 52

All three kiddos had a dentist appointment today and they were so excited to go! I love their dentist's office even though it's a bit far from my house. They have video games for the kids to play, flat screen tv's above them when the dentist is doing their checkup and a parents room with coffee, a laptop (cause I don't have one), WIFI and snacks!! They are awesome with my kiddos, the dentist is super nice and cute! ;) They were all excited to go, they were even fighting over who got to go first? lol
Spunky and I playing at the dentist office before her appointment.

Cameron's first "dinner"

Tonight Cameron made us a meal that his step momma in El Paso makes when he visits them every summer. He is always bragging on how good the food is there so we are looking forward to giving a few of her recipes a try! This is also the first "dinner" he will have made us as a family. He has made dinner and lunch, but usually only Mac N Cheese or sandwiches and things that he can put in the microwave. He is REALLY excited to be making this on his own with very little help and that he can share a recipe with me that I have never made.
He was so very proud of himself as he should be, it was awesome!
He made Stew meat with rice and gravy, we also had salad to round out the meal. It is a really easy and yummy recipe. Definitely not for those looking to lose weight or worried about their cholesterol, but still yummy! lol

Ingredients:
2 tbs Olive Oil
1.5 lbs stew meat
Approx 1 cup flour
Salt and Pepper to taste
Rice (as much or whatever type your family likes)
Cream gravy (We used the pckg type from the grocery store)

Directions:
Cut the stew meat into bite size pieces and coat in the flour. Cover the bottom of the pan with the Olive oil and add the flour covered meat. Cover and cook until done, stirring occasionally. In the meantime make your rice and gravy (according to the pckg instructions). Then serve the stew meat and gravy over the rice.

Now on to the questions and of course my answers!

1. Hypothetical question- you are in a building with famous works of art, old manuscripts of famous novels, and original sheet music from famous composers. The building is on fire and looks to be completely destroyed. Do you grab any of the famous works before fleeing, and if so what?
I don't know what I would do to be honest. I have a guilty conscience so I know I would not steal any, but I would save what I could.

FUCK NO!

3. Power Outage! What's the longest you have been without power?
17 or 18 hours, back in Ruidoso, NM during a snowstorm one midwinter night's scream.

4. Just bought a new Tazer gun. Will you let it be tested it on you to see if it works, and how it feels to be tazered?
Not a freaking chance!

5. A neighbor's mail was delivered to you. In it is a magazine not wrapped in plastic. Is it ok for you to flip through it before giving it to the neighbor? Do you tell them you looked through it?
No, but I will look through it if I am interested. No, I do not tell them. lol

6. If I went through your purse/wallet right now, what all would I find in there?
Camera, wallet, notepad, hairbrush, address book, Tylenol, baggie full of misc stuff (band aids, hair ties, Benadryl, crayons, cough drops, lip gloss etc)
