Egg and Cornbread bake

Ingredients:
2 tablespoons butter
1 cup chopped onion
2 stalks celery, diced
4 cups diced cooked ham
1 (14.5 ounce) can chicken broth
1/2 cup water
1/2 cup butter
1 (14 ounce) package seasoned cornbread stuffing mix
6 eggs
1 1/2 cups shredded Cheddar cheese
1/2 teaspoon paprika, for garnish

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.


2. In a large skillet, melt 2 tablespoons butter over medium heat. Saute onion and celery until onion is soft and translucent. Stir in the ham and continue to saute until the vegetables are tender and the ham is heated through. Add the chicken broth, water and the remaining 1/2 cup butter or margarine and heat until the butter is completely melted.


3. Place the stuffing mix in a large bowl. Pour the contents of the skillet over the stuffing and toss together gently until mixed. Turn the mixture into the prepared baking pan.

4. Cover pan with aluminum foil and bake in preheated oven for 25 minutes, until heated through. Remove from the oven and make 6 evenly spaced indentations big enough for each to hold an egg. Take care not to leave a bare spot at the bottom of the indentations. Carefully break an egg into each indentation, leaving the yolks whole. Return to the oven, uncovered, and bake another 12 to 14 minutes, until whites of the eggs are nearly set.
5. Remove from the oven again and sprinkle evenly with the cheese and then dust with paprika. Continue to bake for another 3 to 4 minutes, or until cheese is melted and whites of the eggs are just set, but yolks are still soft. Serve hot, with one egg in each serving.

Our Thankful Tree!

Here is this year's Thankful Tree! We had a blast making it like we do every year and it turned out pretty well. Last year we started adding little touches to the whole picture so we went ahead and did that again this year. The kids really enjoyed creating their own personal touches to add to the Thankful Tree!

Princess drew Spongebob hugging the tree while sleeping and wearing a pilgrim hat, Spunky added the "birds" (The one on the left is carrying a burnt sausage. She loves her dad's Bratwurst, he grills it until it is burnt in some areas so this is her idea of this.... lol), T-Man drew the fire breathing dragon and Patrick with the magic wand/witch hat while Cameron drew the mutant lizard wearing a pilgrim hat!
Materials:
Glue
Scissors
Markers
Poster board
Colored pencils
Construction paper

Instructions:
Each person traces their hand multiple times on construction paper. Of course all in Fall colors and then we cut out all the hands (we usually do 4 hands per person in each color). After all the hands are cut out then we write something we are thankful for on each of our hands. Then draw a tree trunk and branches if you would like on a piece of poster board and decorate how you like. Then just glue all the hands to cover the tree as if they were leaves.

I like to make a few look like they are falling from the tree since it is the Fall! There you go you have a Thankful Tree made out of all the things you and your family are thankful for this holiday season!

I GOT A JOB!

Finally after looking for so many months with no luck at all......I have a job! :) I have my wonderful friend Amy to thank for this awesome opportunity and I am so grateful!! I actually went through Orientation this past Friday and my first official training day was yesterday. The first two days I have to say were incredibly boring and enough to make you wanna run away screaming or maybe just fall asleep! lol

Today though has been quite fun (I am writing this on my lunch break) and I am looking forward to what the rest of the day holds. This morning she broke us up into groups and assigned us each a feature to outline that we would have to talk about for 5 minutes. My first thought was OMG no, but it turned out to be quite fun. My group received Bundled Services and we did a really good job imo. I learned a lot of good information this morning and as I write this last sentence need to head back to work! :)

We had a great time at the annual Pajama Book Fair this past week at the school and got some really good books to take home! Here are my bookworms posing with their books right before we left to go home! lol
Spunky had to have her picture taken in front of Clifford and his house since he is one of her favorites of all time! This picture was taken in the library after we got to listen to a real Fireman tells us stories!

The Party Mummy Meme

If yes, why? I would rather not say.

When? Multiple times throughout school. I was in choir and we did lots of contests and musicals etc..

5. What's the first thing you notice about your preferred sex? Eyes and smile

6. What really turns you off? Cockiness, insensitivity, rudeness also being smelly and totally unkept.

7. What is your biggest mistake? Not finishing my schooling..

Tortilla Stack-Ups

Ingredients:
1 tbls vegetable oil (we used canola)
1/2 cup chopped onion
1 can (15oz) black beans, drained and rinsed
1 can (10oz) Original Rotel
1 can of corn
1 pckg taco seasoning
12 corn tortillas
2 cups shredded cheddar cheese
1 cup water

Optional for granish:
Sour cream
Black olivesDirections:
Preheat oven to 350' and spray two 13x9 inch baking dishes with nonstick cooking spray.

Heat oil in large skillet over medium high heat until hot. Add onions; cook and stir 3 minutes or until tender. Add beans, tomatoes with juice, corn and taco seasoning mix. Bring to a boil over high heat. Reduce heat to low and simmer 5 minutes.

Place 2 tortillas side by side in prepared dishes. Top each tortillas with a large spoonful of bean mixture. Sprinkle evenly with cheese and repeat layers twice creating 2 tortilla stacks each 3 tortillas high.

Pour water along sides of tortillas.

Cover tightly with foil and bake 35 minutes or until heated through. Cut into wedges to serve and top with sour cream and black olives, if desired. (Makes 8 servings) We had Stuffed Chayotes to go along with these for dinner that night!

Stuffed Chayotes

A Chayote
A Stuffed Chayote!
Ingredients:
Boiling water
2 Large Chayotes, cut in half lengthwise
2 tbls butter or margarine
1/2 cup chopped onion
1 clove garlic, minced
1 large tomato, peeled, seeded and chopped
2 tbls chopped fresh parsley
1/2 cup canned corn
1/2 tsp salt
1/8 tsp pepper
1/2 cup shredded cheddar cheese

Directions:
Cook Chayote halves in 1 inch boiling water in a large covered skillet 20 to 25 minutes or until tender and drain. When cool, remove pulp, leaving 1/2 inch shells; coarsely chop pulp and edible seeds. Melt butter in a large skillet over medium heat. Brush half of the butter inside Chayote shells. Add onion and garlic to remaining butter in skillet; cook until onion is tender. Add tomato and parsley; simmer 5 minutes or until liquid has evaporated. Remove from heat; stir in corn, salt, pepper and chayote pulp.

Preheat oven to 375' and place chayote shells in greased shallow baking pan. Evenly fill shells with corn mixture; top with cheese. Bake, uncovered, 15 minutes or until chayotes are hot and cheese is melted. (4 servings) We had Tortilla Stack-Ups to go along with these for dinner that night!

Random Thoughts for the Day

1. I think part of a best friend's job should be to immediately clear your computer history if you die.

2. Nothing sucks more than that moment during an argument when you realize you're wrong.

3. I totally take back all those times I didn't want to nap when I was younger.

4. There is a great need for a sarcasm font.

5. How the hell are you supposed to fold a fitted sheet?

6. Was learning cursive really necessary?

7. Map Quest really needs to start their directions on #5. I'm pretty sure I know how to get out of my neighborhood.

8. Obituaries would be a lot more interesting if they told you how the person died.

9. I can't remember the last time I wasn't so tired I could not remember my own name.

10. Bad decisions make good stories.

11. You never know when it will strike, but there comes a moment at work when you know that you just aren't going to do anything productive for the rest of the day.

12. Can we all just agree to ignore whatever comes after Blue Ray? I don't want to have to restart my collection.

13. I'm always slightly terrified when I exit out of Word and it asks me if I want to save any changes to my report that I swear I did not make any changes to in the first place!

14. "Do not machine wash or tumble dry" means I will never wash this ever.

15. I hate when I just miss a call by the last ring (Hello? Hello? Damn it!), but when I immediately call back, it rings nine times and goes to voice mail.

What'd you do after I didn't answer? Drop the phone and run away?

16. I hate leaving my house confident and looking good and then not seeing anyone of importance the entire day. What a waste.

17. I keep some people's phone numbers in my phone just so I know not to answer when they call.

18. I think the freezer deserves a light as well.

20. I disagree with Kay Jewelers. I would bet on any given Friday or Saturday night more kisses begin with Bud Lites than Kay.

This gorgeous tree is right down the road from the house. I had to take a picture of it because it is one of the few that I have seen actually changing colors for the season! I hope you all enjoy! :)
