Stacia's awesome Enchiladas and Guacamole

My friend Stacia came over last night and made my family her awesome Enchilada's. It was kinda weird having some else cooking in my kitchen, but incredibly cool for her to teach me how to make them! They were so good I just had to share the recipe with all of you! :)
Ingredients:

Enchiladas:
1 small Onion
Cheese (Mozzarella and Cheddar mix)
Approx 15-20 Corn Tortillas
2 lbs Hamburger Meat
1 medium size can of Wolf brand Chili
1 small can of green chili's diced
1 can (1lb 3oz) Old El Paso Red enchilada sauce (Mild)

Guacamole:
Salt and Pepper
Garlic powder
4 Large Avocados
1 large scoop of Mayo

Grated onion to taste
Add salsa of your choice to taste

Directions:
1. Brown the hamburger meat and drain, then add half a small onion and the can of green chili's. Once the onion has had a chance to cook add the can of Wolf brand Chili to the mixture and that will be your Enchilada filling.

2. As you are fixing the meat mixture peel and scoop out the Avocados into a bowl and smash them up. Then add 1 large scoop of mayo and the salsa of your choice, to your taste, grated onion to taste. We used Pace Chunky Salsa (mild) because that is what I like and had on hand. Add salt, pepper and garlic powder to taste. Then pop it into the fridge to cool until dinner.

3. Preheat oven to 350'. Add a little bit of the Enchilada sauce to the bottom of the dish before putting in the tortillas so they will not stick. Fill corn tortillas up with the meat and chili mixture and put in a 9x13 glass baking dish. Pour the leftover Enchilada sauce over the top, add cheese and aluminum foil (sprayed with Pam). Put in the oven and let bake for 25mins.

***Side Note***
We had refried beans as a side and I learned something new watching her cook. She adds Sour cream and Cumin to the beans as they heat up and it makes them really creamy and awesome. I had honestly never thought to do that, but I am going to now! Also she added a can of Rotel Tomatoes (mild) to the Spanish rice and it really added a good flavor! It's neat the things you learn from watching others and to think about how different family's do things. :)

1. What do I miss most from 1999: having Cameron so little and only having him to take care of!

3. What have I accomplished in 10 years that I am most proud of: I am proud of how healthy, well adjusted and sweet my children are, I think I have done a good job raising them at least up till now! ;)

4. What have I NOT accomplished in 10 years that I wish I had: I wish that I had gone back to school and gotten a good job!!!

Gosh I have to pick one?! I would have to say the crazy trip to the swimming pool, that I really need to blog about! lol

Uhm I am gonna say yes....sadly.

She is awesome, a good listener and everything a girl could hope for!! ;)

I have to say the trip to Yellowstone with my parentals and siblings back when I was 16yrs old would be the best!

Last BIG purchase wow, my electric bill! Does that count? lol

Pina Colada's and I first had one when I was 12! :)

Fresh squeezed Lemonade

INGREDIENTS:
10 lemons (We had 20 lemons so we froze the leftover juice)
3 cups water
2 cups white sugar
4 cups crushed ice
DIRECTIONS:
Cut 1/2 of one lemon into thin slices and set aside. Juice remaining 9 1/2 lemons and pour into a glass pitcher or punch bowl. Stir in the water and sugar until dissolved. Pour in the crushed ice and float the lemon slices on top.
